TOQUÉ! and IVANHOE CAMBRIDE have been collaborating for several years to reduce garbage while creating compost according to environmental guidelines of the Gold LEED certification obtained in 2008.
One of the most exciting results is now known as POTAGER B-10 located on the 10thfloor of the CDP Capital building - a seasonal vegetable and herb roof garden for the kitchen of Toqué! This garden is cultivated in 16 planter-tubs which represent a surface of 200 sq. ft. A variety of vegetables are planted ranging from tomatoes, beans, lettuce, spinach, carrots to fine herbs and other experimental seeds. The Fafard organic products company sponsors all the products needed for growth including soil-based compost, fertilizer and other agricultural products.
Grand Chef Relais & Châteaux Normand Laprise and his associate Christine Lamarche have for the past 20 years been great supporters of local products by developing trustworthy and friendly relationships with local suppliers. This year, Toqué! adds another dimension to providing local products with the Potager B-10 house-crops. A portion of the greens, herbs and veggies on the restaurant’s menu will come directly from the garden tucked-away on the roof – fresh and crisp to savour all summer long.
